Brewing Guide - Black Teas:
To make the perfect cup of Black Tea, we recommend that you use 1 teaspoon of tea per 6 ounces of water. Bring water to a rapid boil to ensure that the full flavor of the black tea herb is released. Steeping Time: 3-5 minutes. Beware of over-steeping as a black tea will become bitter.

Oolong, a traditional Chinese tea, is considered a “cross” between green and black teas. This Formosa Oolong is smooth and refreshing with the subtle aroma of honey and a sweet-fruity flavor. The leaf of Oolong tea is full of antioxidants and polyphenols which support good health. |

Brewing Guide - Green Teas:
As a general guideline, Green Teas taste best when brewed at "lower" temperatures. Green tea also requires less steeping time. Heat water to boiling, then pour the water off into a Pyrex cup and allow it to cool from 2 to 5 minutes. Use 1 teaspoon of tea per 8 ounces of water. Steeping Time: Experiment with a range of 1 to 3 minutes.
| Herbal Teas |
• Rooibos African Red Bush Tea
African Rooibos tea is an herbal tea made from the South African Red Bush. The unique red-orange color of Rooibos is natural. It is also naturally sweet and naturally caffeine free.
Rooibos contains anti-oxidants and is rich in a variety of healthful minerals. Studies reflect a long list of reported health benefits which make this tea attractive to health conscious consumers. Notably, Rooibos tea does not become bitter when steeped for long periods of time. In fact, in some African locales, the indigenous people steep Rooibos for days! |
• Yerba Mate
Unlike most herbal teas, Yerba Mate contains caffeine. The flavor of Yerba Mate is vegetal and grassy, much like a green tea. Numerous health benefits are attributed to Yerba Mate. In 1964, the Pasteur Institute and the Paris Scientific society concluded: "...it is difficult to find a plant in any area of the world equal to Mate in nutritional value," and Yerba Mate contains "practically all of the vitamins necessary to sustain life." |

Brewing Guide - Rooibos:
To brew Rooibos, we recommend 1 teaspoon of tea per 6 ounces of water. Heat the water to "near" boiling. (Note: Do not let the water go to full boil for a long time. This causes the oxygen to dissipate and will make your tea taste flat.) Steeping Time: 5 to 10 minutes. You can use the same tea for several infusions.
Brewing Guide - Yerba Mate:
To brew Yerba Mate, we recommend 1 tablespoon of tea per 8 ounces of water. Steep the Yerba in hot water, not boiling, for best flavor release. Steeping Time: 3 to 5 minutes. You can use the same tea for several infusions. Add sugar or honey to sweeten the Yerba, or try adding lemon. Note: Beware of over-steeping as the Yerba will become bitter.
| Tisanes |
A tisane is a naturally caffeine-free blend of herbs, flowers, roots, nuts, and fruits. The tisane, also called an "herbal infusion," is brewed like a tea. Rosehips and hibiscus leaves
-- an excellent source of naturally occurring Vitamin C -- are standard ingredients in all of our tisane blends. Our tisanes are both healthful and delightfully aromatic.
These lovely tisanes are delicious served hot or iced. To cool a hot summer day (and to tickle the "child within"), try making tisane popsicles! |
